Blender Banana Bread

This recipe has become a staple in our house because of how easy it is to make! Simply throw your ingredients in the blender, fold in some chocolate, and bake!

INGREDIENTS

3 ripe bananas
2 cups almond flour
2 eggs
1/4 cup tapioca flour
2 Tbsp maple syrup
2 Tbsp butter or coconut oil, melted
1.5 tsp baking powder
2 tsp vanilla extract
2 tsp cinnamon
Pinch of salt
1/2 cup dark chocolate chips, more for topping

INSTRUCTIONS

Preheat the oven to 350.

Combine all ingredients except for the chocolate chips in the blender, and mix until well combined.

Fold in the chocolate chips, then transfer mixture to a parchment-lined loaf pan.

Top with more chocolate chips.

Bake for 55-60 minutes.
