Citrus & Fennel Salad
This salad is so flavorful and will become a staple recipe of yours this winter. You can add a protein to make it a complete meal, or serve it as a side dish.

Ingredients
For the salad:
6oz red butter lettuce
1 grapefruit, diced
2 medium oranges, diced
1 cup of thinly sliced fennel
1/4 cup of thinly sliced red onion
1/2 cup of pumpkin seeds
For the dressing:
1/4 cup of extra virgin olive oil
2 tbsp apple cider vinegar, I like Braggs
1 tbsp Dijon mustard
1/2 tsp salt
Instructions
Thinly slice your fennel and red onion using a mandolin.
Dice the oranges + grapefruit and prepare the dressing.
Add your red butter lettuce to a large bowl.
Top the lettuce with the pumpkin seeds, citrus fruit, red onion, and fennel.
Drizzle with the dressing before serving, and enjoy!
