No-Bake Cereal Bars

I love baking during the holiday season, but sometimes I just need a break! These grain-free cereal bars were a hit at my last potluck, and will definitely be a crowd-pleaser at your holiday gathering.

I used Eat Love Bird cereal here to make this recipe grain-free and low in added sugars, but you can use whatever cereal you prefer!


INGREDIENTS

1 cup of creamy peanut butter (or any nut butter)

1/3 cup of maple syrup

3 cups of Eat Love Bird grain free cereal

1 3.5oz bar of dark chocolate, broken into pieces (1/2 cup of dark chocolate chips would work too)

Optional: flaky sea salt for sprinkling

INSTRUCTIONS

Start by combining the peanut butter and maple syrup in a saucepan over medium heat. Stir well until the edges of the mixture begin to bubble.

Mix in the cereal, then transfer to a parchment lined baking dish (8x8 or 9x7). Flatten the mixture into the baking dish evenly.

Break your chocolate bar into pieces and melt – you can do this in the microwave or on the stovetop. If using the microwave, heat the chocolate in 30 second intervals, stirring between.

Pour the melted chocolate over the cereal mixture, sprinkle with flaky sea salt, then refrigerate for at least 2 hours before serving.
