MUFFIN INGREDIENTS

5 pastured eggs

2 bananas, mashed

1 cup roasted sweet potato or canned pumpkin

1 cup shredded zucchini, excess liquid squeezed out with towel

1 tsp vanilla extract

1/2 cup coconut flour

1 tsp baking soda

1 tsp cinnamon

INSTRUCTIONS

Combine wet ingredients, then add dry. Spoon into muffin tins lined with baking cups. Bake in preheated 350 degree oven for 28-30 minutes. Store in fridge (3-5 days) or freezer (months).
