Coconut Macaroon Snack Balls

This recipe was originally posted on the Wild Vibes site in 2015, but unfortunately the link doesn't work, so I'm reposting here for those of you who have asked for this recipe—it's a good one!


INGREDIENTS

Makes 12 balls

1 cup shredded unsweetened coconut

5 medjool dates, pitted

1 Tablespoon coconut oil

1/4 cup collagen peptides - I use this brand (use code FUNK for 20% off)

1 teaspoon vanilla extract

1/4 teaspoon real sea salt

2 Tablespoons water

INSTRUCTIONS

Place all ingredients in a food processor. Process until well combined. This mixture will be sticky and you may have to scrape down the sides of the food processor bowl. 

Using a tablespoon, scoop out spoonfuls of the mixture and roll into balls. 

Place in refrigerator for at least 30 minutes to firm up. Store in fridge.

These travel well as snacks, but they do soften up.
