Creamy Pumpkin Pasta Sauce

Who else is tired of topping their pasta with marinara or pesto?

This creamy pumpkin sauce is a great way to get into the Fall mood and use that pumpkin purée you have sitting around your pantry.

The pumpkin in this recipe makes the sauce nice and creamy like an Alfredo, with the added benefits of antioxidants and fiber. The pumpkin flavor in the sauce is pretty subtle, so it’s a great way to incorporate more plant foods into the diet of your picky eaters (more plant foods = happy microbiome).

PASTA SAUCE INGREDIENTS

1/2 can pumpkin purée (about 1 cup)
1/2 cup veggie broth
1/4 cup white onion, finely diced
2 cloves of garlic, minced
10 sage leaves, finely sliced⁣
1 tbsp avocado oil
1/4 tsp salt, to taste

INSTRUCTIONS

In a medium skillet, sauté onions & garlic in avocado oil until browned.

Mix in the sage, and sauté for one minute more.

Stir in the pumpkin purée and broth, whisking to combine. Simmer the mixture for 5 minutes, until it has thickened to your liking.

Serve over your favorite pasta & enjoy!
