Knockoff Larabar Recipe

I'm not a huge fan of meal-replacement or snack bars—most are heavily processed with junky ingredients. Even the "healthy" ones are riddled with sketchy additives, isolates and sweeteners.

If I'm looking for a snack bar to grab on the go, I usually pick up a Larabar. Most varieties are made with whole food ingredients like dried fruit and nuts. However, it is kind of a bummer that Larabar is owned by General Mills, a company who opposes the labeling of GMOs—not really a company I want to support, ya dig? Another downside to Larabars is the cost—at nearly $2.00 a pop, these guys can add up if you're snacking on them regularly. The solution? Make your own! All you need is a food processor, some dried fruit, nuts and/or seeds and you're ready to go! Try this basic recipe and tell me what you think—a healthy and easy snack for kids and adults alike!

INGREDIENTS

1/2 cup cashews (unroasted, unsalted)

1/2 cup almonds (unroasted, unsalted)

1/2 cup walnuts

1/2 cup shredded coconut (unsweetened)

1/2 cup raisins

6 medjool dates, pitted

INSTRUCTIONS

Combine first 4 ingredients in a food processor and process until fine. Add next two ingredients and pulse until crumbly.

The mixture can be formed into small bars or rolled into balls for a quick and convenient snack. Store in refrigerator for longer keeping. You can also make extra and freeze.
